The wood plank protects from the direct heat of the flame -
the meat cooks from the top down, producing very juicy steak, burger, fish....

Soak planks in water for at least one hour before grilling -
Marinate the Meat with your own secret stuff!
Place meat on plank and close the grill with a cover –
Cooks from the top down a little slower than direct heat
Control the fire by restricting the air, or with a water spray –
do not turn the meat – check with a thermometer
When cooked -Extinguish the planks for another use
or burn the charred wood for more smoke for your next fire
(shut off all the air or dunk the chunks in a pail of water to douse the fire –
do not set your house on fire!)

My guess is that the Native Americans of our Pacific Northwest used cedar planks to cook their salmon
because they didn't have cast iron.
I use hardwood planks to cook my meat now - because I can!
